    Hey friends, today I’m going to share a really easy summer recipe with you.

    When it gets hot outside, nothing beats a cold scoop of homemade sorbet. Berry and lemon usually get all the attention. But kiwi? It makes an amazing frozen treat. It’s bright green, sweet, and has a great little sour kick.

    I recently asked ChatGPT for a quick dessert idea. It gave me a kiwi sorbet recipe, and I just had to try making my own version.

    The good news? You don’t need a fancy ice cream maker for this. Making this treat at home is easier than taking candy from a baby.

    Homemade Kiwi Lime Sorbet

    What You Need

    Here is a quick breakdown of what you’ll need for 4 servings:

    • 4 ripe kiwis: Peel them and chop them up.
    • 1/2 cup sugar: This sweetens the fruit and keeps the sorbet soft.
    • 1/2 cup water: To make a quick sugar syrup.
    • 1 tbsp fresh lime juice: Adds a nice pop of flavor.

    Quick Tip: Look for kiwis that are a little soft when you squeeze them. Hard kiwis will taste way too sour!

    How to Make It

    Step 1: Make the Syrup

    Put your water and sugar in a small pot over medium heat. Stir it up until the sugar disappears. This takes about 3 minutes. Take it off the heat right away and let it cool.

    Do not pour hot syrup over your fruit. It will ruin that fresh flavor and turn the bright green color into a dull brown!

    Step 2: Blend It Up

    Put your chopped kiwi, cooled syrup, and lime juice into a blender. Blend for about 30 seconds until it looks smooth.

    Do not over-blend. If you crush the little black seeds, your sorbet will taste bitter!

    How to Make Kiwi Lime Sorbet

    Step 3: Freeze and Scrape

    Pour the liquid into a shallow metal or glass pan. Put it in the freezer for 2 hours.

    And then… you check on the pan. The edges are hard. The middle is still soft. Now it’s time for the secret trick.

    Take a fork and scrape the frozen edges into the soft middle. Mash it all up! This breaks up the ice and makes it super smooth.

    Smooth the top down with a spoon and freeze for 1 more hour.

    Easy Flavor Swaps

    Want to mix things up? Try these simple changes:

    • Swap the lime: Use lemon juice instead for a different sour kick.
    • Add berries: Replace 2 kiwis with a handful of fresh strawberries.
    • Add some spice: Throw a tiny pinch of fresh ginger into the blender.

    How to Serve It

    Scoop your sorbet into small bowls. Top it with a fresh mint leaf or a few extra fruit slices.

    3. Initial FreezePour the mixture into a shallow glass or metal dish. Cover tightly with plastic wrap. Place in the freezer for 2 hours until the edges set firm while the center stays soft.
    4. Scrape and SetRemove the pan from the freezer. Use a sturdy metal fork to scrape the icy edges into the soft center. Fluff it vigorously like a slushy granita. Smooth the top with a spatula and freeze for 1 more hour.

    • Pick ripe fruit: Choose kiwis that give slightly to a soft squeeze. Firm, hard kiwis will yield a sour sorbet.
    • Never use hot syrup: Pouring warm syrup over fresh kiwi ruins its vibrant green color and fresh flavor.

    • Top with a fresh mint sprig or extra kiwi slices.
