A bright green, icy-cold fruit treat made with fresh kiwis and a splash of lime juice. It is as refreshing as an ocean breeze on a hot summer afternoon! No fancy ice cream machine needed—just a simple blender and a fork.

Ingredients

Scale
  • 4 whole ripe kiwis (peeled and roughly diced)
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 tbsp fresh lime juice

Instructions

  1. Make the Simple SyrupCombine water and sugar in a small pot over medium heat. Stir until the sugar dissolves completely—about 3 to 5 minutes. Remove from heat immediately and let it cool to room temperature.
  2. Blend the Fruit BaseAdd the diced kiwis, cooled syrup, and fresh lime juice into a blender. Blend on high for 30 to 40 seconds until smooth. The secret? Keep it quick! Over-blending crushes the tiny black seeds, which can make your sorbet taste bitter.
  3. Initial FreezePour the mixture into a shallow glass or metal dish. Cover tightly with plastic wrap. Place in the freezer for 2 hours until the edges set firm while the center stays soft.
  4. Scrape and SetRemove the pan from the freezer. Use a sturdy metal fork to scrape the icy edges into the soft center. Fluff it vigorously like a slushy granita. Smooth the top with a spatula and freeze for 1 more hour.

Notes

Tips & Tricks

  • Pick ripe fruit: Choose kiwis that give slightly to a soft squeeze. Firm, hard kiwis will yield a sour sorbet.
  • Never use hot syrup: Pouring warm syrup over fresh kiwi ruins its vibrant green color and fresh flavor.

Serving Suggestions

  • Scoop into chilled glass coupes or small bowls.
  • Top with a fresh mint sprig or extra kiwi slices.
  • Planning a party? Drop a scoop into a glass of chilled sparkling water or prosecco.

Storage Instructions

  • Freezer Storage: Keep leftovers in an airtight container for up to 2 weeks. Press a sheet of parchment paper against the surface to block freezer burn.
  • Serving Advice: Home freezers freeze solid! Let your sorbet sit on the kitchen counter for 5 to 10 minutes before scooping so it softens up nicely.
