Ingredients

Scale

Ice Cream Sandwich Base:

  • 16 waffle cookies (flat-style, store-bought or homemade)
  • 1 cup vanilla ice cream, softened
  • 1 cup mint ice cream, softened
  • 1 cup strawberry ice cream, softened

For Decoration:

  • ½ cup desiccated coconut
  • ½ cup chopped pistachios
  • ½ cup colorful sprinkles

Instructions

1. Prepare the Cookies and Workspace

  • Line a baking tray with parchment paper.
  • Lay 8 waffle cookies flat-side up.

2. Softening and Adding Ice Cream

  • Slightly soften all ice creams for 5–10 minutes.
  • Spread vanilla ice cream (approx. 2 tablespoons) evenly on each cookie.
  • Add a thinner layer of mint ice cream for a green stripe.
  • Top it off with strawberry ice cream for a vibrant pink hue.

3. Assemble the Sandwiches

  • Place another waffle cookie on top, flat-side down. Gently press to secure layers without breaking the cookie or squeezing the ice cream out.

4. Add Decorative Edges

  • Roll the sides of each sandwich in your choice of coconutpistachios, or sprinkles for a textured finish.

5. Freeze and Chill

  • Place the sandwiches on the prepared tray and freeze for at least 2 hours or until firm.

Notes

Serving Suggestions:

  • Arrange the sandwiches on a wooden platter for a rustic touch.
  • Add extra sprinkles or pistachios around the tray for presentation.

Tips & Tricks:

  • Ensure the ice cream is softened enough to spread but not melted.
  • If the cookies are too rigid, let them sit at room temperature for 1–2 minutes before assembling to prevent cracking.

Storage Instructions:

  • Store in an airtight container with parchment paper between sandwiches.
  • Keeps well in the freezer for up to 1 week.

Make-Ahead Advice:

These sandwiches are perfect to prepare ahead of time. Assemble and freeze them a day or two before your event for less stress on the day of serving.
