This eggless, churned ice cream blends pure, tangy pomegranate juice with a rich cream base to create a refreshing treat with a soft rose color. Whole pomegranate seeds are stirred in at the last minute, giving every creamy bite a juicy, sweet-tart pop.
In a large bowl, whisk together the heavy cream, whole milk, pomegranate juice, and sugar. Keep whisking for 2 to 3 minutes until no sugar grains remain at the bottom. Stir in the vanilla extract.
Pour the chilled mixture into your ice cream maker. Run for 20 to 25 minutes until it thickens to the consistency of soft-serve.
Scatter the fresh pomegranate seeds into the machine during the final 2 minutes of churning. Mix just long enough to distribute them evenly without crushing them. Transfer the ice cream to a freezer-safe container, press parchment paper directly onto the surface, and freeze for at least 4 hours.
