This Paleo Mint Chocolate Chip Ice Cream is a creamy, refreshing dessert that’s perfect for hot days or anytime you crave a guilt-free treat. Made with coconut milk, natural sweeteners, and peppermint extract, it’s dairy-free, refined sugar-free, and customizable for AIP, vegan, or keto diets.   • 2 small cans full-fat coconut milk (13.5 oz. each) or 3½ cups homemade coconut milk
  • ⅔ cup liquid sweetener (allulose for keto, maple syrup/agave for vegan, honey/maple for Paleo)
  • 2 tablespoons vanilla extract (optional, for creamier texture)
  • ¾ to 1 teaspoon peppermint extract (adjust to taste)
  • ½ cup unsweetened or dark chocolate shavings (or carob shavings for AIP)

Instructions

  1. Blend the Base: Combine coconut milk, sweetener, vanilla extract (if using), and peppermint extract in a blender. Blend until smooth and the sweetener is fully dissolved (about 50 seconds). Alternatively, whisk together in a bowl if no blender is available.
  2. Churn the Ice Cream: Pour the blended mixture into an ice cream maker and churn according to the manufacturer’s instructions (approximately 20 minutes). The mixture will thicken into a soft-serve consistency.
  3. Add Chocolate Shavings: About 5 minutes before the ice cream is fully churned, add the grated chocolate or carob shavings. Let them mix evenly into the ice cream.
  4. Freeze or Serve: Serve immediately as soft-serve or transfer to an airtight container and freeze for at least an hour for a firmer texture.
