Ingredients

Scale

Ice Cream Base:

  • 11.5 oz (326 g) Vanilla Protein Shake
  • 2 tbsp Swerve Sugar Substitute (Granulated-Allulose Blend)
  • ½ tsp Mint Chocolate Chip Lorann Oil (or peppermint extract)
  • 1 tsp Vanilla Bean Paste
  • 4 drops Green Food Coloring (optional)
  • ¼ tsp Guar Gum

Mix-ins:

  • 2 tbsp Zero-Sugar Chocolate Chips (chopped)

Optional:

  • 12 tbsp Unsweetened Almond Milk (for texture adjustment during respin)

Instructions

  1. Prepare the Ice Cream Base:
Blend the protein shake, sugar substitute, mint extract, vanilla bean paste, food coloring, and guar gum in a blender until smooth and fully combined. Pour the mixture into a Ninja Creami pint container.
  2. Freeze the Mixture:
Freeze the pint container on a level surface without the lid for at least 24 hours. Ensure your freezer is set between -7°F and 9°F for best results.
  3. Churn the Ice Cream:
After freezing, place the pint in the Ninja Creami machine and select the “Lite Ice Cream” setting. If the texture is crumbly, add 1–2 tbsp almond milk and respin until creamy.
  4. Add Mix-ins:
Create a small well in the center of the ice cream and add chopped chocolate chips. Use the “Mix-In” function to evenly distribute them.
  5. Serve and Enjoy:
Scoop into bowls or cones and enjoy your creamy, minty treat immediately!

Notes

Serving Suggestions:

  • Garnish with extra chocolate chips or fresh mint leaves for a decorative touch. Serve alongside warm brownies for an indulgent pairing!

Tips & Tricks:

  • Blend thoroughly to ensure guar gum is evenly mixed for a smooth texture.
  • Adjust mint extract to taste—start small and add more if needed to avoid overpowering flavor.

Storage & Reheating:

  • Store leftovers in the same pint container with a flat surface to prevent air pockets. Freeze immediately after serving.
  • To enjoy later, let the pint sit at room temperature for 5–10 minutes before respinning on “Lite Ice Cream.”
