  • 1 large or 2 small ripe bananas, sliced
  • 23 tablespoons brown sugar (to taste)
  • 1/2 teaspoon ground cinnamon, divided
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk
  • 3/4 cup heavy cream
  • 3 tablespoons chopped nuts (optional, for mix-ins)

Instructions

  1. Caramelize the Bananas: In a small saucepan over medium heat, melt the butter. Add sliced bananas and sprinkle with 2 tablespoons brown sugar and 1/4 teaspoon cinnamon. Cook for 2–3 minutes on each side until softened and caramelized. Remove from heat and let cool slightly.
  2. Blend the Base: In a large measuring cup or bowl, combine the caramelized bananas (and their syrup), remaining cinnamon, vanilla extract, and whole milk. Use an immersion blender to puree until smooth. Stir in heavy cream and whisk to combine. Taste and adjust sweetness with an additional tablespoon of brown sugar if needed.
  3. Freeze: Pour the mixture into a Ninja Creami pint container, ensuring it doesn’t exceed the max fill line. Secure the lid and freeze on a level surface for at least 24 hours.
  4. Spin in the Ninja Creami: Remove the pint from the freezer and place it into the outer bowl of your Ninja Creami machine. Lock it into place and select the “Ice Cream” function. If crumbly after spinning, use the “Re-spin” function once or twice until creamy.
  5. Add Mix-ins (Optional): To incorporate nuts or other mix-ins, create a small well in the ice cream, add your mix-ins, and use the “Mix-in” function.
