This Whole30 Banana Coconut Ice Cream is a luscious, dairy-free dessert that’s as wholesome as it is indulgent. Roasted bananas bring a natural caramel sweetness, while rich coconut milk provides the creamy base. Topped with crunchy caramelized almonds, this treat is perfect for satisfying your sweet tooth without compromising on clean eating.

Ingredients

Scale
  • 4 medium bananas (ripe, peeled)
  • 3 tablespoons melted coconut oil
  • 6 tablespoons date syrup, divided (or maple syrup for non-Whole30 versions)
  • 1 can (13.5 oz) full-fat coconut milk (chilled)
  • 3/4 cup sliced almonds

Instructions

  1. Roast the Bananas: Preheat your oven to 375°F and line a baking sheet with parchment paper. Arrange peeled bananas on the sheet, drizzle with melted coconut oil and 3 tablespoons of date syrup. Roast for 15–20 minutes until golden and fragrant. If bananas are very ripe, check at 15 minutes to avoid over-roasting.
  2. Blend the Base: Transfer the roasted bananas to a blender or food processor. Add the chilled coconut milk and blend until smooth and creamy.
  3. Chill the Mixture: Pour the banana-coconut mixture into a bowl, cover tightly, and refrigerate for at least 4 hours or overnight to ensure it’s cold enough for churning.
  4. Churn the Ice Cream: Use an ice cream maker to churn the mixture according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour it into a freezer-safe container and stir every hour for 3–4 hours to break up ice crystals.
  5. Caramelize the Almonds: Heat a skillet over medium heat. Add sliced almonds and the remaining 3 tablespoons of date syrup. Stir frequently for about 5 minutes until almonds are toasted and coated in sticky syrup.
  6. Serve and Enjoy: Scoop the ice cream into bowls or cones, then top with caramelized almonds for added crunch.
