Instructions

1. Make the Cookie Dough

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  3. Beat in the eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in the mini chocolate chips evenly.

2. Bake the Cookies

  1. Scoop 1 1/2 tablespoons of dough onto the lined baking sheets, leaving about 2 inches between each.
  2. Flatten slightly with the back of a spoon.
  3. Bake for 10–12 minutes, or until the edges are golden and the centers are still soft.
  4. Let cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

3. Assemble the Ice Cream Sandwiches

  1. Once cookies are fully cooled, turn half upside down as bases.
  2. Scoop 1/4 cup of softened vanilla ice cream onto each base cookie. Use a spoon to spread evenly.
  3. Top with a second cookie (flat side down) and press gently.
  4. For added flair, roll the exposed ice cream edges in chopped nuts, sprinkles, or more chocolate chips.
  5. Place assembled sandwiches on a parchment-lined tray and freeze for at least 1 hour to firm up before serving.
