  • ½ cup (122.5 g) whole milk
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 3 cups ice
  • ⅓ cup (96 g) kosher salt (or Himalayan/rock salt)

Instructions

Step 1: Prepare the Cream Mixture

In a small resealable plastic bag, combine heavy cream, whole milk, sugar, and vanilla extract. Seal tightly and shake gently until the sugar dissolves completely. Remove excess air from the bag before sealing again.

Step 2: Set Up the Ice Bag

In a larger resealable plastic bag, add ice and sprinkle in kosher salt. Place the sealed cream mixture bag inside the ice bag, ensuring both bags are tightly sealed.

Step 3: Shake to Freeze

Shake the bags vigorously for about 5 minutes. Wrap the bags with a towel or wear gloves to protect your hands from the cold.

Step 4: Check & Serve

Remove the smaller bag from the ice bag and check the consistency of your soft serve. Scoop or pipe into bowls or cones and enjoy immediately!
