A creamy, refreshing homemade ice cream inspired by the iconic Thin Mint cookies. Perfectly minty with chocolatey crunch, this dessert is a breeze to make with the Ninja Creami!

  • 1½ cups milk (whole milk recommended)
  • 4 tablespoons instant vanilla pudding mix
  • 1 teaspoon peppermint extract
  • ½ cup heavy cream
  • 46 drops green food coloring (optional)
  • ¼ cup chopped Thin Mint cookies (about 46 cookies), plus extra for garnish

Instructions

  1. Prepare the Base: In a mixing bowl, whisk together milk and pudding mix until fully dissolved. Stir in peppermint extract, heavy cream, and green food coloring until well combined.
  2. Freeze the Mixture: Pour the mixture into a Ninja Creami pint container, ensuring it doesn’t exceed the max fill line. Seal with the lid and freeze on a flat surface for at least 24 hours.
  3. Churn the Ice Cream: Remove the pint from the freezer and place it in the Ninja Creami’s outer bowl. Lock it into the machine and select the “Ice Cream” function. If crumbly, press “Re-spin” or add a tablespoon of milk before re-spinning.
  4. Add Mix-Ins: Create a well in the center of the ice cream using a butter knife. Add chopped Thin Mint cookies to the well and press down gently. Use the “Mix-In” function to incorporate them.
  5. Serve and Enjoy: Scoop into bowls or cones, garnish with extra cookie pieces if desired, and enjoy immediately!
