  • 3 tablespoons instant sugar-free vanilla pudding mix
  • ½ cup heavy cream or canned coconut cream
  • 1 teaspoon vanilla extract

Instructions

  1. Mix Ingredients: In a mixing bowl or large measuring cup, whisk together the milk and pudding mix until fully dissolved. The mixture should start to thicken slightly.
  2. Add Cream and Vanilla: Stir in the heavy cream (or coconut cream) and vanilla extract until smooth and creamy.
  3. Freeze Mixture: Pour the mixture into a Ninja Creami pint container, ensuring it doesn’t exceed the max fill line. Secure the lid and freeze on a flat surface for at least 24 hours.
  4. Churn Ice Cream: Remove the frozen pint from the freezer and place it into the Ninja Creami machine. Lock it in and select the “Lite Ice Cream” function.
  5. Adjust Consistency: If crumbly or powdery, use the “Re-spin” function. Add a tablespoon of milk if necessary and re-spin until creamy.
