A creamy, protein-packed dessert that combines the tanginess of cottage cheese with the natural sweetness of strawberries. Perfect for a refreshing treat that’s both indulgent and healthy!

  • 1 cup fresh strawberries, sliced
  • 3 tablespoons sugar or monk fruit sweetener (for macerating)
  • 1 cup low-fat cottage cheese
  • 1/4 cup 2% milk
  • Optional: 1 tablespoon sugar or monk fruit sweetener, to taste

Instructions

  1. Macerate Strawberries: In a small bowl, mix sliced strawberries with 3 tablespoons of sugar or monk fruit sweetener. Let sit for 10–15 minutes, stirring occasionally, until the berries release their juices.
  2. Blend Ingredients: In a large measuring cup or mixing bowl, combine macerated strawberries (with juices), cottage cheese, and milk. Blend with an immersion blender until smooth. Taste and adjust sweetness with an additional tablespoon of sugar or sweetener if needed.
  3. Freeze Mixture: Pour the blended mixture into a Ninja Creami pint container. Secure the lid and freeze on a flat surface for at least 24 hours.
  4. Process in Ninja Creami: Remove the frozen pint from the freezer and place it in the outer bowl of your Ninja Creami machine. Lock it into place and press the “Lite Ice Cream” button.
  5. Re-spin if Needed: If the texture is crumbly or powdery after the first cycle, press “Re-spin.” For extra creaminess, add 1 tablespoon of milk and re-spin again if necessary.
  6. Serve & Enjoy: Scoop into bowls or cones and enjoy immediately!
