A creamy, chocolatey delight loaded with crunchy almonds and gooey marshmallows, this Ninja Creami Rocky Road Ice Cream is a homemade twist on the classic dessert. Perfect for satisfying your sweet tooth, it’s easy to make and packed with flavor!

Ingredients

Scale
  • 1 ½ cups milk (whole or 2%)
  • 3 tablespoons instant sugar-free chocolate pudding mix
  • ½ cup heavy cream
  • ½ teaspoon vanilla extract
  • ¼ cup chopped almonds
  • ¼ cup mini marshmallows

Instructions

  1. Prepare the Base: In a small bowl, whisk together the milk and pudding mix until smooth. Stir in the heavy cream and vanilla extract until fully combined.
  2. Freeze the Mixture: Pour the mixture into a Ninja Creami pint container, ensuring it doesn’t exceed the max fill line. Seal the lid and freeze on a flat surface for at least 24 hours.
  3. Process in Ninja Creami: Remove the frozen pint from the freezer, place it in the Ninja Creami outer bowl, and lock it into the machine. Select the “Lite Ice Cream” function.
  4. Adjust Texture (if needed): If the ice cream appears crumbly, add a tablespoon of milk and press “Re-spin” until smooth.
  5. Add Mix-ins: Create a small well in the center of the ice cream using a spoon handle. Add half of the almonds and marshmallows into the well. Reinsert into the machine and press “Mix-In.”
  6. Serve: Scoop into bowls or cones, topping with remaining almonds and marshmallows for extra texture.

Notes

Serving Suggestions:

Serve in chilled bowls or waffle cones for an authentic ice cream parlor experience. Add a drizzle of chocolate syrup or sprinkle extra nuts for garnish.

Tips & Tricks:

  • Use cold ingredients to ensure a smooth texture.
  • For dairy-free options, substitute almond milk for milk and canned coconut cream for heavy cream.

Storage & Reheating:

Store leftovers in an airtight container in the freezer for up to one week. To restore creaminess, reprocess using “Re-spin” or let sit at room temperature for 5–10 minutes before serving.
