Ice Cream Base:

  • ½ tablespoon cream cheese (room temperature)
  • ⅓ cup sugar
  • 1 teaspoon vanilla bean paste (or extract)
  • 2 tablespoons lime curd
  • ½ cup half-and-half
  • 1¼ cups whole milk
  • 1 teaspoon lime juice (key lime or regular)

Mix-ins:

  • 1 graham cracker (crushed or broken)
  • ½ teaspoon lime zest

Instructions

  1. Blend the Base: Combine cream cheese, sugar, vanilla bean paste, lime curd, half-and-half, milk, and lime juice in a blender. Blend until smooth and lump-free. Pour into a Ninja Creami pint container.
  2. Freeze: Place the pint container in the freezer on a flat surface without the lid. Freeze for at least 24 hours at a temperature between -7°F and 9°F.
  3. Process in Ninja Creami: After freezing, insert the pint into the Ninja Creami machine. Process using the “Gelato” setting until smooth and creamy.
  4. Add Mix-ins: Create a small hole in the center of the gelato and add crushed graham crackers and lime zest. Re-spin using the “Mix-In” function to incorporate them evenly.
  5. Serve & Enjoy: Scoop into bowls or cones, garnish with extra lime zest or whipped cream if desired, and enjoy immediately!
