Ingredients

Scale
  • ¾ cup whole milk
  • 2 tablespoons instant vanilla pudding mix
  • 2 tablespoons sugar (or monk fruit sweetener)
  • 1 teaspoon vanilla extract
  • 1 cup small-curd whole milk cottage cheese

Instructions

  1. Mix the Base: In a mixing bowl, whisk together whole milk and pudding mix until fully dissolved. Add sugar and vanilla extract, whisking until smooth. Fold in the cottage cheese until evenly combined.
  2. Freeze: Pour the mixture into a Ninja Creami pint container, ensuring not to exceed the max fill line. Tap gently to remove air bubbles, secure the lid, and freeze flat for at least 24 hours.
  3. Process: Remove the frozen pint from the freezer and place it in the Ninja Creami’s outer bowl. Lock it into the machine and select the “Ice Cream” function.
  4. Re-spin if Needed: If the texture is crumbly or powdery after the first spin, use the “Re-spin” function. For extra creaminess, add 1 tablespoon of milk before re-spinning again.
  5. Optional Mix-ins: Create a well in the center of the ice cream and add mix-ins like chocolate chips or fruit. Use the “Mix-in” function to incorporate.

Notes

Serving Suggestions:

  • Serve in bowls or cones with toppings like fresh fruit, chocolate shavings, or crushed nuts for added texture.

Tips & Tricks:

  • Use full-fat small-curd cottage cheese for optimal creaminess. If using low-fat cottage cheese, add 1–2 tablespoons of heavy cream to enhance texture.
  • Taste your base mixture before freezing to adjust sweetness as needed.
  • Avoid over-spinning to prevent overly soft ice cream.

Storage & Reheating:

  • Store leftovers in the Ninja Creami pint container with a secure lid for up to 2 weeks.
  • To enjoy later, let the frozen pint sit at room temperature for 10–15 minutes before re-spinning in the Ninja Creami.
