Instructions

1. Prepare the Cookies

  • Line a baking sheet with parchment paper.
  • Melt the chocolate in the microwave (20-second intervals, stirring each time) or using a double boiler.
  • Dip one side of each cookie in melted chocolate. Let excess drip off, then place cookies on the baking sheet.

2. Assemble the Sandwiches

  • Place one cookie (chocolate side down) on a flat surface.

3. Freeze for Stability

  • Freeze for at least 1 hour to allow the ice cream to firm up.
